Hurray to Earth Day! Today, Spring is still shining through this chilly, cloudy weather. Our planet is blossoming from a cold, dark winter, and now it's time to celebrate the beauty of growth.
Images of painted grocery bags with green and blue worlds and the recycle symbol are greeting me today, as I remember my experiences of Earth Day at Keene Central School in my younger years. The Mountains were still pretty bare at this time, but buds were starting to pop up on the trees in the neighborhood. I remember painting mountains on my grocery bag when I was in elementary school; they were a signature of mine.
Today we thank Mother Earth for her never-ending nurture, and strength. I've been meaning to share a recipe that I played with a few weeks ago; where I also had some fun with "art" and vegetables- as you can see above- and I think you'll like the later of this creation.

Inspired by the roasted broccoli sandwich at a very new but very incredible cafe in Providence-Sydney- I decided to take my recipe play to another level.
If I never said it before, I'll say it now... I LOVE SANDWICHES. My first experiences of the food service industry happened at Simply Gourmet in Lake Placid, New York- home to a giant menu with 46 sandwiches named after the high peaks of the Adirondack Park. Years later, and now I'm a lucky employee at Sydney, where quality sandwiches are also stars on a chalk-written menu. My love and excitement for sandwiches still lives today, and using the inspiration of a past job and a current job, satisfaction was conquered.
I made a spicy chili/lime mayo, and fried an egg in seaseme and chili oil; I predicted these items to go well with the roasted broccoli and cauliflower. Last but not least, some avocado to cool some of the heat.
It's been a really long time since I last wrote a post, and it's been an even longer time since I posted a recipe, so today I'm doing both.
I found that beautiful, sunful photo on an instagram account called suitestpee, started by self-care master Tessa Ridley, and I discovered that today is the beginning of a very significant astrological retrograde- the Venus retrograde. Though I am not an astrology genius, I do enjoy following it, and I often find a lot of accuracy in the forecasts. To my understanding, this retrograde will bring an awakening of love in our lives- between ourselves, and others. The first part of the retrograde starts in the Aries constellation- a fire Zodiac- and during this time, we will bathe ourselves in the warmth of self-love; scrubbing away the dirt that does not serve us anymore.

Ever since I decided to carry this message with me permanently, I've experienced great growth through ups and downs, and lately, I can feel my soul piecing the dirt, reaching for light I've been waiting to see. Everything is glowing in positivity.
One of the bright new chapters in my life is the journey as a Zumba instructor, and although I am licensed to teach a class, I sill have a lot of work to do. For the first time, though, I am on a fitness path that is proving to be a puzzle piece I didn't know I needed.
Between this new healthy journey and this fiery, love-giving retrograde theme, my foodie imagination was struck with a desire to put some creativity on the table. I wanted to make something as lovely as Venus, something as cleansing as light, and something as warm as fire, so I made a Beetiful Smoothie Bowl. Can you guess what the "fire" element is?
